
Easy Easter Bunny Cake
Growing up my mother used to make this Easter Bunny Cake each year. I love the combination of buttercream frosting and coconut. Here’s how this one was made:
Here’s what you’ll need:
1 white boxed cake mix (make per instructions on box)
1 double-batch of buttercream frosting (click for recipe)
2 bags of sweetened coconut flakes
green food coloring
poster board (for ears)
jelly beans (for eyes)
First I made a white cake per the directions on the box. I baked the cake in a straight-sided round bundt pan. After letting the cake cool come I sliced the cake in half. Here’s a picture of what it looked like. It’s not perfect. That’s ok. I’ll show you how to fix any cracks or dings.

I used buttercream frosting to glue it all together. (I made a double batch of frosting). The frosting recipe link is below.
I used buttercream frosting to “glue” my base together.
Once the base of my bunny rabbit is all frosted I pressed sweetened coconut flakes all over the rabbit.
I pressed coconut flakes into the frosted cake.
Then I used green food coloring to dye some coconut flakes green. In a large ziploc bag add a few drops of green food coloring to your desired amount of “grass.” For greener grass add more food coloring. I sprinkled the green “grass” around my little guy.
The last step s to give my rabbit poster board ears and two pink jelly bean eyes. All done!
